Piñas Bay...Panama


Piñas Bay in the Pacific Panamanian coast has been called the Jurasic Park of Panama and it is....


As we arrived a sudden storm received us so as to tell us we were here.
Then a night of waves that made all end up sleeping on the floor of the boat .
Next day 8 to 12 feet high waves, a lot of dramamine and we barely made it though a day of fishing with only dourades to show for it this time...they made wonderful ceviche later on as we got to San Jose Island at the Pearl Islands where we went for a bit of solace...

Next time we hope for Marlin!!!!

Sister countries celebrate Christmas







A group of friends from Colombia and Venezuela celebrated our Christmas dinner together. We included foods from both countries like the pan de jamón or ham bread and the potato salad with chicken from Venezuela. We had arepas with cheese , cocadas and coconut rice from Colombia. 
Of both our gastonomic fare we prepared Turkey and Pork Leg with turkey dressing made of pork and beef seasoned with capers, olives, apples and almonds.

Merry Christmas celebrated.

Mamina´s Xmas in Panama






Mamina´s Short three day trip to Panama was full of events.

We went out to the nearby island of Taboga for a wonderful afternoon ful of sun and summer. We had a small gathering for her xmas gifts before she left and made the tree that night!!!

Christmas for Hospitalized Children





The Association of Colombian women in Panama
or Asociación de Damas Colombopanameñas

visited the children at the rural hospital at Arraiján
to lighten un the day of children there.
Even a 4 month old baby girl with was able to look at a
stuffed animal and feel the holiday joy.

2 minute chocolate chip cookies


Chocolate Chip Cookies in minutes!


Try this delicious recipe for cookies in minutes. Pack them up and give them away too!

Double Chocolate Chip Cookies
48,     1  1/2 inch cookies
1 stick butter, cut in pieces
2/3 cup sugar
1/2 cup pressed brown sugar
1 egg
1 teaspoon vanilla
1 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semi sweet chocolate chips

1. Process butter and sugars 1 minute. 
2. Add egg and vanilla and process 20 seconds more.
3. Add flour mixed previously with baking soda and salt and process 20 seconds more.
4. Add chips and process 10 seconds more.
5. Scoop out into baking pan and bake at 350F for 12 to 15 minutes.

Little Holiday Gifts with lots of Flavor




Give the gift of Coffee this Holiday Season!!!!

I made some small Asian Coffee Vinaigrette bowls and arranged them with carrot sticks, then I placed them on little green plates, christmas tress and Santa Plates. I used different ones and they all looked great.

a morning breakfast, more like brunch, with the most wonderful arepa con huevo, egg filled arepas, chicharron pork fritters, empanadas and bollos served with the best coffee in the world, Colombian Coffee...

Brie and ginger jelly



Try this quick recipe for a Holiday hors d ´oeuvres!

1 brie cheese
2 tablespoons ginger jelly
1 teaspoon rum

Mix jelly and rum with a fork and place over brie.
Microwave the cheese on defrost for 15 seconds to remove the chill from the fridge and serve with toasts.
